Z's Craft BBQ set to open Saturday morning

Local connoisseurs of fine Texas barbecue will have their first chance to get a taste of the flavors Zardrell McKnight has dedicated himself to creating tomorrow morning at the Grundy Community Center.
           
Z’s Craft BBQ will be open to the public beginning at 11:00 a.m. with slow smoked meats including beef brisket, beef ribs and pulled pork seasoned to perfection and cooked over an offset oak wood fire.
           
Founder, owner and operator Zardrell McKnight is a 21-year-old who originally hails from Richmond, Virginia, and he has a passion for the Central Texas BBQ popular in the Austin area. He hasn’t established a permanent schedule yet, but he plans to play it by ear and continue to experiment with his menu as the food truck restaurant gets off the ground.
           
And he’s even got a name for his style: Iowa Craft BBQ.
           
“No one else around here is doing it like this,” he said.
